To create the most exquisite, creamy, delicious chocolates with their dark brown color and sweet taste we exclusively use Trinitario organic cacao beans which grow by the unique combination of temperature and humidity of the tropical rainforest and volcanic soils of Costa Rica.
Trinitario cacao is named after its place of origin Trinidad Island. It is a hybrid between Criollo and Forastero cacao trees and it accounts for less than 10% of the current world production. In 1721 a natural disaster wiped out nearly the entire Criollo crop of Trinidad. To restore the crops, plantations were replanted with Forastero trees which hybridized with the remaining Criollos. The resulting new Trinitario variety retained the delicate flavors of Criollo and the heartiness and resistance of Forastero.
The Trinitario cacao in our chocolate is packed with flavonoids and polyphenols which act like antioxidants in the body. These antioxidants have the ability to neutralize molecules that damage the body’s organs and cells. They also help to combat heart disease by relaxing blood vessels. Furthermore, eating Dark Chocolate may improve people´s mood, it reduces stress and promotes feelings of happiness.
